提到外卖包装商家和消费者都关注什么?
What are the concerns of both food delivery packaging merchants and consumers?
通过线上问卷调查的方式,我们收集了来自1678个商家和524名消费者关于外卖包装的相关反馈。其中,参与调研的商家涵盖了本次报告的六大类菜品,消费者主要为轻中度外卖使用群体(问卷调研中,67%的消费者每周点1-5次外卖)。
We collected feedback on takeaway packaging from 1678 merchants and 524 consumers through an online questionnaire survey. Among them, the surveyed merchants covered the six major categories of dishes in this report, and the consumers were mainly the light to medium delivery user group (in the questionnaire survey, 67% of consumers ordered 1-5 takeout times a week).

本次参与问卷调研的商家涵盖的品类有:(1) 冰凉甜点、水果捞;(2)轻食、沙拉、健康餐;(3)西式点心、蛋糕、糕点;(4)咖啡、茶饮、奶茶、果汁;(5)饺子、包子、寿司、饼类;(6)粥品。
The categories covered by the participating merchants in this survey include: (1) cold desserts and fruit scoops; (2) Light meals, salads, and healthy meals; (3) Western style Dim sum, cake, pastry; (4) Coffee, tea drinks, milk tea, fruit juice; (5) Dumplings, buns, sushi, and pancakes; (6) Congee.
调研中发现,商家最关注包装的性能,环保、外观和成本次之。超70%的菜品出餐温度和最佳食用温度在常温以上,这对商家使用的餐饮包装提出了较高的耐热性和保温性要求。尽管商家认为绿色包装有利于提升品牌价值和辨识度,但成本是制约其推广与使用的因素之一。另外,商家认为包装的外观对品牌宣传有重要的作用。
In the survey, it was found that businesses are most concerned about the performance of packaging, followed by environmental protection, appearance, and cost. More than 70% of dishes are served at temperatures above room temperature, which requires high heat resistance and insulation for the catering packaging used by businesses. Although businesses believe that green packaging is beneficial for enhancing brand value and recognition, cost is one of the factors limiting its promotion and use. In addition, merchants believe that the appearance of packaging plays an important role in brand promotion.
商家最关注包装的安全性、密封性和保温性。符合国家食品安全要求是所有商家最为关注的,也是商家选购包装的底线。不同的菜品对包装的需求不同,粥品的最佳食用温度更高,对包装的耐热性和隔热性提出了更高要求;轻食、沙拉、健康餐更关注包装打包的便捷程度;西式点心、蛋糕、糕点品类还关注包装的挺度;含汤水的菜品更关注包装的密封性,需实现防撒漏的功能。

Compliance with national food safety requirements is the most important concern for all businesses, and it is also the bottom line for businesses to choose packaging. Different dishes have different requirements for packaging. The best eating temperature of Congee is higher, which puts forward higher requirements for heat resistance and heat insulation of packaging; Light meals, salads, and healthy meals pay more attention to the convenience of packaging and packing; Western style Dim sum, cake and pastry also pay attention to the stiffness of packaging; For dishes containing soup, more attention should be paid to the sealing of the packaging, which needs to achieve the function of preventing spillage.
